Looking for an easy dinner? Try this simple meal on the grill. This is perfect for a weekend BBQ with friends or a quick weeknight dinner. If it’s just the two of you, it’s also perfect for leftovers. The best thing about it is there’s very little cooking or prep involved – just pick up a bottle of your favorite Asian-inspired marinade. We used a local one, but you could also try something like this or this. You can make your own, but we’re all for shortcuts that get you out of the kitchen and spending time with friends and family.

If you have time, cut your meat into chunks or long slices in advance, and let it marinade for a few hours. You can either skewer long slices of meat, folded like an accordion or cut the meat and vegetables into cubes that are roughly the same size and alternate between meat and veggies. We used pineapple, bell peppers, and onions for ours, along with chicken. When using chicken, we recommend using skinless boneless chicken breast or thighs to make the prep as easy as possible.

If you’re using wooden skewers, make sure you take a little time to soak them in water before adding the meat and veggies. If you’re only making a few, metal skewers are perfect because they tend to fit more food on each skewer and are reusable.

Ingredients
  • One bottle of Asian Marinade
  • Chicken (3-4 ounces per person) cut into 2-inch cubes
  • Red onion, cut into 2-inch pieces
  • Red, yellow, and green bell peppers, cut into 2-inch pieces
  • One pineapple, cubed
Instructions
  1. Marinade the chicken pieces for at least 15 minutes in your favorite marinade or sauce.
  2. Place all of the vegetables on a large sheet tray and drizzle with olive oil. Sprinkle with salt and pepper, then toss to coat.
  3. Thread pieces of chicken and vegetables onto each skewer, leaving a small space between each piece, and alternating chicken and vegetables. We prefer to put several pieces of vegetables between each piece of chicken.
  4. Heat a grill to high heat, then add kabobs to the hot grill and turn as needed. Remove as soon as the chicken is cooked through and the vegetables are tender.
