Savory Parmesan Thyme Cookies

If you are looking for something to bring to a holiday gathering this season, look no further! If you have five minutes and a food processor, these savory cookies are the perfect small bite to bring along to Thanksgiving dinner or a holiday party. You can also certainly make them all year for entertaining.

We received a copy of Dorie Greenspan’s newest book, Dorie’s Cookies, in the mail a few months ago (c/o). It’s definitely the most comprehensive cookie cookbook we’ve ever seen, and we were especially like the savory cookies chapter. There are so many that we thought would be perfect for holiday season gatherings.

These cookies only have four ingredients: flour, butter, cheese, and thyme. All you need to do is combine all four in a food processor until they start to come together, roll out the dough into a log shape on the counter, then refrigerate. When you’re ready to cook them, they are essentially slice-and-bake.

We added thyme to our cookies, but you could experiment with any herbs or spices you want (e.g., rosemary, fresh cracked black pepper, etc.). They’re so easy to make, we’d make a few different types and serve them on a board like this (c/o) for cocktail hour with some other olives, cheeses, and cured meats. They were perfect with white wine!

  1. Cut the cheese into a few smaller pieces and add to the bowl of a food processor. Pulse several times until it is finely ground, then add the flour and pulse a few more times until the cheese is evenly distributed with the flour.
  2. Add the cold butter pieces to the food processor and pulse until the mixture begins to form very small pieces (slightly smaller than pea-size). As the butter first incorporates, it will first begin to get very fine, dry, and sandy looking, then as you continue to pulse, the pieces will get larger.
  3. Turn out the mixture onto the counter and roll into a log shape. If you notice cracks or bubbles forming, press them out and keep rolling. The log should be very dense, and just about 5" long. Roll tightly in plastic wrap and refrigerate for 2 hours (if pressed for time, freeze an hour).
  4. To bake preheat the oven to 350 degrees, line baking pan with a silpat and slice the cookies into about ¼" slices. Arrange on the silpat and cook for 15-17 minutes. Allow to cool fully on the sheet pan so you don't break them when removing from the pan.
