Roasted carrots is a perfect side for almost any occasion. It goes with chicken, pork, beef, fish, or can be paired with other vegetarian dishes.  We like to roast carrots in a cast-iron skillet but this oval Staub pan (c/o) was also the perfect shape and presentation for roasted carrots.

Instructions
  1. Preheat oven at 400F.
  2. Coat carrots with olive oil, salt, and pepper.
  3. Place in a roasting pan or skillet and roast the carrots for 20 minutes or until they are slightly tender.
