While we were at The Resort at Paws Up in Montana, we had so much fabulous food! Their fine dining restaurant, Pomp, serves high-end ranch food like juicy cuts of bison ribeye and elk tenderloin. They were delicious! The bison ribeye was served with these ranch potatoes. We could have eaten a whole plate of them!
We asked Chef Ben Jones to share this amazing side dish with us. These fried potatoes with caramelized onions are like candy. Serve them alongside anything from steak to fish. These would also be an impressive side dish for Thanksgiving, Christmas, a summer BBQ, or any time you want to wow dinner guests. For a healthier and easier option, if you don’t want to fry the potatoes, you can toss the potatoes in olive oil and bake them at 375F until golden brown, and then mix in the remaining ingredients. They will still be delicious! We’ve tried them both ways and can’t get enough.
- 2 lbs of Red potatoes cut in quarters
- 2 T Grain Mustard
- ½ Cup Caramelized onions
- 2 T Chopped Parsley
- 1 Tsp Chopped Thyme
- ½ Cup Crème Fraiche
- Fresh Black Pepper
- Cook potatoes to al dente in salted water. Cool.
- Fry the cooked potatoes in a fryer at 350F until golden brown.
- Remove and place in large bowl, add remaining ingredients and mix and serve hot!
