Huckleberry Pancakes

Ingredients
  • 4 Cups Flour
  • 1 Teaspoon Salt
  • 4 Tablespoons Baking Powder
  • 2 Tablespoons Baking Soda
  • 4 Eggs
  • 3 Cups Whole Milk
  • ½ Cup Sugar in the Raw (Turbinado)
  • ¾ Vegetable oil
  • 1 Tablespoon Vanilla Paste
  • 2 Cups Huckleberries
  • 2 Cups Granola
  • Butter for grilling
  • Huckleberry Syrup, for serving
Instructions
  1. Mix together all of the ingredients (except for the berries and granola).
  2. Heat a skillet or griddle. Add butter to the griddle, once slightly melted, add batter to the griddle to make a 4 inch pancake.
  3. Add 1 Tablespoon of huckleberries and 1 Tablespoon of granola to each pancake.
  4. Once browned on one side, flip and cook until slightly browned on the other side.
  5. To serve top with huckleberry syrup.

Makes 20, 4 inch pancakes
