Huckleberry Pancakes

- 4 cups flour
- 1 teaspoon salt
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 4 eggs
- 3 cups whole milk
- ½ cup sugar in the raw (Turbinado)
- ¾ cup vegetable oil
- 1 tablespoon vanilla paste
- 2 cups huckleberries
- 2 cups granola
- butter for grilling
- Huckleberry Syrup, for serving
- Mix together all of the ingredients (except for the berries and granola).
- Heat a skillet or griddle. Add butter to the griddle, once slightly melted, add batter to the griddle to make a 4 inch pancake.
- Add 1 Tablespoon of huckleberries and 1 Tablespoon of granola to each pancake.
- Once browned on one side, flip and cook until slightly browned on the other side.
- To serve top with huckleberry syrup.
