  1. Cut the cheese into a few smaller pieces and add to the bowl of a food processor. Pulse several times until it is finely ground, then add the flour and pulse a few more times until the cheese is evenly distributed with the flour.
  2. Add the cold butter pieces to the food processor and pulse until the mixture begins to form very small pieces (slightly smaller than pea-size). As the butter first incorporates, it will first begin to get very fine, dry, and sandy looking, then as you continue to pulse, the pieces will get larger.
  3. Turn out the mixture onto the counter and roll into a log shape. If you notice cracks or bubbles forming, press them out and keep rolling. The log should be very dense, and just about 5" long. Roll tightly in plastic wrap and refrigerate for 2 hours (if pressed for time, freeze an hour).
  4. To bake preheat the oven to 350 degrees, line baking pan with a silpat and slice the cookies into about ¼" slices. Arrange on the silpat and cook for 15-17 minutes. Allow to cool fully on the sheet pan so you don't break them when removing from the pan.
