  1. Salt a large pot of water and bring it to a boil.
  2. Meanwhile, heat butter in a large sauté pan, then add the guanciale or pancetta and cook until it begins to brown. Add the diced onion and a the crushed chiles, along with a pinch of salt. Cook until the onions are translucent.
  3. Add the tomatoes and bring the sauce to a simmer. Salt to taste.
  4. While the sauce is simmering, add the bucatini to the boiling water and cook for one minute less than the package directions indicate. When the pasta timer goes off, use tongs to move it into the simmering sauce, along with ¼ cup of the pasta water and the grated cheese.
  5. Toss the pasta to coat with the sauce, top with freshly grated cheese, and serve.
