Herb Roasted Potatoes
- 1 lb yukon gold potatoes, scrubbed, dried, and sliced in half or quarters (depending on the size)
- olive oil
- French gray sea salt
- 1 tablespoon parsley, chopped
- 1 tablespoon rosemary, chopped
- 1 tablespoon thyme, chopped
- Freshly cracked pepper
- Preheat your oven to 375°F.
- Toss potatoes with enough oil just to coat. Add herbs, salt, and top with freshly cracked pepper.
- Cook until golden and crispy. Toss once or twice while cooking.
