Pasta Salad with Tuna and Cherry Tomatoes

  1. Salt a large pan of water and bring to a boil (we use gray salt or kosher salt for this). When the water is boiling, add the pasta and cook for one minute less than indicated on the package instructions.
  2. Meanwhile, rinse the cherry tomatoes and cut in half, thinly slice the basil leaves, and remove the tuna from the jar and cut it into chunks. It's fine if it starts to fall apart a little, but be sure to reserve the oil.
  3. When the pasta timer goes off, drain the pasta through a colander and let cool for a few minutes. Toss the pasta with the oil from the jar of tuna, the tomatoes, and basil. If the pasta salad is too dry, add an extra drizzle of olive oil.
  4. Shave strips of cheese over the pasta and finish with a sprinkle of sea salt, to taste.
