Parmesan Custards with Figs and Saba

Ingredients
  • ¾ cup half and half
  • 3 eggs
  • ¾ cups Grana Padano cheese, grated
  • salt
  • pepper
  • Saba
  • butter to line dish
  • figs, sliced thinly
  • parchment paper, optional
Instructions
  1. Pre-heat oven to 350F.
  2. Butter molds. If you like, cut circles of parchment paper to line the bottom.
  3. In a bowl, mix half and half, eggs, cheese, and a pinch of salt, and freshly ground pepper. Spoon the mixture into the prepared molds.
  4. Place molds in a roasting pan. Fill the pan with boiling water so that it reaches halfway up the sides of the molds.
  5. Cover the roasting pan with foil and bake 25-30 minutes, or until the custards set.
  6. Top custards with figs and drizzle with saba.
