Watermelon Gazpacho with Sheep Milk Feta and Cilantro

Ingredients
  • 3 medium tomatoes
  • 3½ cups of watermelon, diced
  • 1 jalapeno, seeded
  • 1 lime, juiced
  • 1 english cucumber, peeled and cut into ½" pieces
  • ¼ onion, sliced
  • 1 tablespoon red wine vinegar
  • ⅓ cup olive oil
  • ¼ cup cilantro, roughly chopped
  • Watermelon, garnish
  • Feta, garnish
Instructions
  1. Cut tomatoes into quarters and cut out the tough core. Blend the tomatoes in a Vitamix until completely smooth.
  2. Add all the remaining ingredients to the blender and blend until smooth. Season to taste with salt, garnish with watermelon and feta, and serve immediately.
