Meyer Lemon Potato Salad
  • 3 medium potatoes
  • ½ Meyer lemon, juice and zest
  • small handful Parsley
  • Oil
  • Salt
  • Pepper
  1. Boil potatoes in a large pot of salted water until they are fork tender. Remove potatoes from the pan, cool, and rub off the skin with a paper towel. Chop into 1 inch cubes.
  2. To a bowl, add the potatoes, lemon juice and zest, parsley, and drizzle with good olive oil. Toss to coat and add salt and pepper to taste.
